There's a new gluten free 1-for-1 flour in town..and you're going to LOVE it! Meet Queen St. Bakery 1-for-1 Superfood Baking Flour. It's made with millet seed fllour, sorghum flour, tapicoa starch and xantham gum. That's it.. No refined flours, no fillers, no ingredients you can't read. It's super good and I love that it's a cup-for-cup flour.
Yesterday I woke up after a nice long sleep - thanks to baby sleeping through the night - and whipped up a loaf of my favourite banana bread with this new flour.
I love it, my husband loves it, and even baby loves it. (Side note: Ellie won't be a baby for much longer...she's turning ONE at the end of this month...crazy how fast time flies).
SUPERFOOD GF BANANA BREAD
3 ripe bananas
1/3 cup melted coconut oil
1 tsp baking soda
3/4 cups coconut sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups of GF cup-for-cup flour (I used Queen St. Bakery 1-for-1 Superfood Baking Flour)
Preheat the oven to 350 degrees F and grease/line a loaf pan.
Mash the bananas until completely smooth (I like to use an immersion blender). Stir in the coconut oil.
Mix in the baking soda and stir in the coconut sugar, egg and vanilla extract.
Mix in the flour.
Pour the batter into the loaf pan and bake for 50-60 minutes.
